This chia pudding recipe is super easy to make. It’s packed with nutrients and feels decadent enough to enjoy for dessert, not to mention being a healthy option for breakfast or a snack.
Well, instead of sharing a long story about why I felt inspired to make this sweet goodness on a Friday, let’s get on with the recipe, shall we?

Easy Chia Pudding
Ingredients:
1 can full fat coconut milk
7 Tbsp whole chia seeds
1 Tbsp pure maple syrup
1 drop pure vanilla extract
Easy steps:
Stir all ingredients together in a medium sized bowl. It will begin to thicken. If it appears to be too runny after stirring for a few minutes, add another Tbsp of chia seeds. Put it in the fridge for 10-15 minutes. Take it out and enjoy!
** Add berries or some cacao or whatever else you feel like tasting. Lily likes to warm frozen berries up a little to add contrast to the coolness of the chia pudding.
** Put it in the fridge overnight and it will thicken even more. With this recipe, you should have some left over to enjoy the next day anyway :)
